The MS Mitsui Ocean Fuji is a Japanese cruise ship operated by Mitsui O.S.K. Lines under its new Mitsui Ocean Cruises brand. Originally launched as the MV Seabourn Odyssey in 2009 for Seabourn Cruise Line, the vessel was acquired by Mitsui O.S.K. Lines in February 2023 for its ideal size and suitability for cruising Japan's scenic Seto Inland Sea. Following the acquisition, the ship continued to operate under Seabourn until September 2023 before being transferred to Mitsui Ocean Cruises.

In September 2024, the ship arrived in Yokohama, Japan, for an extensive refit, which included the upgrade of advanced technologies like the LFC biodigesters, originally installed by its former operator. The MS Mitsui Ocean Fuji embarked on its inaugural voyage under Mitsui Ocean Cruises on December 1, 2024.

The LFC® biodigester is a machine that digests food waste. These machines are usually installed in a galley or recycling center and reduce the expense, inconvenience, mess, and carbon footprint of disposing of food waste that would otherwise be taken off in a tender. Power Knot has nine different sizes that digest from 10 kg (20 lb) per day to 6000 kg (13200 lb) per day of food waste. With many hundreds of installations globally on land and on the ocean, the LFC biodigester has proven to be reliable, safe, and cost effective.
